Las Hermanas Pimentón de la Vera
Las Hermanas are a longstanding family run business (established 1940) specialising in the manufacture of Pimentón de la Vera (Las Hermanas smoked paprika as we know it in the UK).
Pimentón de la Vera has been produced in the Extremadura region of la Vera in Spain for centuries, with cultivation beginning in the Yuste Monastery around the 16th century.
Pimentón de La Vera carries the coveted EU designation of Denominación de Origen Protegida (Protected Denomination of Origin), a guarantee of the quality and consistency of the paprika produced in the region and this is clearly displayed on the tins of Las Hermanas Smoked Paprika.
In la Vera, the peppers used to make the paprika enjoy a privileged microclimate and develop naturally, sheltered by the rugged peaks of the Sierra de Gredos mountains, gorges and green meadows through which the Tiétar river flows.
The process used to create Pimentón de la Vera is unique. The highest quality peppers are smoked and dried over an American Oakwood fire. This process takes from ten to fifteen days, during which expert hands cleverly turn the peppers until the ideal degree of dehydration is achieved. In the Las Hermanas factory, the dried peppers are milled in a seven stage process which is overseen by their team of experts. This traditional process is what gives Pimentón de la Vera its three essential characteristics: aroma, taste and colour.
Pimentón de la Vera, has a distinct smokey flavour and aroma and the Las Hermanas Smoked Paprika is available in three varieties: Dulce (Sweet), Agridulce (Bittersweet) and Picante (Hot).
